Sweet & Sour Summer Vegetables

with UNCLE BEN'S Sweet & Sour Light Sauce

Ingredients

  • 500 g UNCLE BEN'S Sweet & Sour Light Sauce
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1 red onion, sliced
  • 200 g mushrooms, sliced
  • 1 courgette, sliced
  • 1 carrot
  • handful coriander, freshly chopped
  • 2 tbsp vegetable oil
  • dash soy sauce

Method

  1. Heat the oil in a pan and stir fry the peppers for 3 minutes. Add mushrooms and onion and cook for 3 minutes
  2. Add the courgette and cook for 2 minutes and then add peeled carrot ribbons into the pan
  3. Add the UNCLE BEN'S Light Sweet & Sour Sauce and a dash of soy sauce, then cook on a gentle heat for 3-5 minutes
  4. Remove the pan from the heat and stir in the chopped coriander
  5. Heat the UNCLE BEN'S Express Egg Fried Rice and serve in a bowl with the sauce mix spooned on top
