Ingredients

500 g UNCLE BEN'S Sweet & Sour Light Sauce

1 red pepper, sliced

1 yellow pepper, sliced

1 red onion, sliced

200 g mushrooms, sliced

1 courgette, sliced

1 carrot

handful coriander, freshly chopped

2 tbsp vegetable oil

dash soy sauce

Method
- Heat the oil in a pan and stir fry the peppers for 3 minutes. Add mushrooms and onion and cook for 3 minutes
- Add the courgette and cook for 2 minutes and then add peeled carrot ribbons into the pan
- Add the UNCLE BEN'S Light Sweet & Sour Sauce and a dash of soy sauce, then cook on a gentle heat for 3-5 minutes
- Remove the pan from the heat and stir in the chopped coriander
- Heat the UNCLE BEN'S Express Egg Fried Rice and serve in a bowl with the sauce mix spooned on top
