Roasted Peppers with Chilli Filling

with UNCLE BEN'S Chilli Con Carne Sauce

Ingredients

  • 500 g UNCLE BEN'S Chilli Con Carne Sauce
  • 350 g lean minced beef
  • 4 long red peppers, halved
  • 2 tomatoes, sliced
  • 100 g halloumi, sliced
  • 1 carrot, grated
  • 100 g white cabbage, shredded
  • 15 g toasted pumpkin seeds
  • 15 g toasted sunflower seeds
  • 1 tbsp lemon juice or cider vinegar

Method

  1. Heat the oil in a pan and add the minced beef bit by bit and cook until browned
  2. Add the UNCLE BEN'S Chilli Con Carne, stir well, then reduce the heat and simmer for 20-25 minutes
  3. Preheat oven to 190ºC/Gas Mark 5. Arrange peppers hollow side up in a baking tray and bake for 5 minutes
  4. Spoon in the chilli mix and top with sliced tomatoes and halloumi. Return to the oven to bake for 15-20 minutes
  5. Make the salad by mixing the carrot, cabbage, toasted seeds and lemon juice or cider vinegar
  6. Serve the peppers alongside the carrot and cabbage salad
