Ingredients

250 g UNCLE BEN'S Boil in Bag Long Grain Rice

4 pork loin steaks

4 tbsp fruit marmalade

2 tbsp olive oil

1 lemon, rind finely grated

1 orange, rind finely grated

black pepper

25 g butter

1 tbsp olive oil

2 red apples, cored and chopped

1 medium red onion, peeled and chopped

1 tbsp thyme, chopped
Why not try?
Use shredless orange marmalade instead of the 3 fruit glaze for a smooth glaze
Method
- Cook the rice according to the instructions on the packet
- Cook the pork steaks under a medium grill for 10 minutes, turning occasionally
- To make the glaze, gently heat the marmalade, 1 tbsp of olive oil, lemon and orange rind and seasoning in a saucepan until melted
- Brush the pork generously with a glaze and cook under the grill for a further 5-8 minutes turning and basting occasionally.
- Melt the butter and remaining olive oil in a small saucepan; add the chopped apple and onion and sauté for 3-5 minutes until softened and golden. Stir in the thyme
- When cooked, stir the rice in with the apple and onion mixture, mix well and season to taste
- Serve the pork steaks immediately, with the apple and onion rice
