500 g UNCLE BEN'S Chilli Con Carne Sauce

500 g UNCLE BEN'S Express Long Grain Rice

450 g minced beef

175 g packet of tortilla chips

3 ripe tomatoes, deseeded and chopped

50 g jalapeno peppers, sliced (optional)

75 g Cheddar cheese, grated

Method
- Heat large non stick frying pan and add the minced beef. Brown all over, breaking up with the back of a wooden spoon. Stir in the UNCLE BEN'S Medium Chilli Sauce. Bring to the boil, cover and simmer for 10 minutes.
- Preheat the grill to medium/hot. Tip the minced beef mixture into a heatproof dish and scatter over the tortilla chips to cover. Scatter over the tomatoes, jalapeno peppers (if using) and grated cheese. Grill for 2 minutes until the cheese has melted. Serve with UNCLE BEN'S Express Mexican Rice or Long Grain Rice.
