Chicken Paella

with UNCLE BEN'S Loose Long Grain Rice

Ingredients

  • 300 g UNCLE BEN'S Loose Long Grain Rice
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 red pepper, deseeded and cut into 4 pieces
  • 3 large skinless chicken breasts, each cut into 4 pieces
  • 2 cloves garlic, finely chopped
  • 1 tsp turmeric
  • 230 g tomatoes, chopped
  • 1.2 ltrs chicken stock
  • 175 g fine green beans, halved
  • 1 small handful flat leaf parsley, roughly chopped
  • 2 wedges lemon

Substituting 200ml of stock for dry white wine

Method

  1. Heat the oil in a large deep frying pan and fry the onion and pepper for 2-3 minutes until softened but not browned. Stir in the chicken and garlic and cook for 4-5 minutes. Add the turmeric, tomatoes, rice and stock, bring to the boil and simmer uncovered for 10 minutes, stirring occasionally.
  2. Stir in the green beans and simmer for a further 10-12 minutes until nearly all the liquid has been absorbed (the mixture should be wet not saucy). Serve sprinkled with roughly chopped flatleaf parsley and lemon wedges to squeeze over
