Ingredients

300 g UNCLE BEN'S Loose Long Grain Rice

1 tbsp vegetable oil

1 onion, chopped

1 red pepper, deseeded and cut into 4 pieces

3 large skinless chicken breasts, each cut into 4 pieces

2 cloves garlic, finely chopped

1 tsp turmeric

230 g tomatoes, chopped

1.2 ltrs chicken stock

175 g fine green beans, halved

1 small handful flat leaf parsley, roughly chopped

2 wedges lemon

Method
- Heat the oil in a large deep frying pan and fry the onion and pepper for 2-3 minutes until softened but not browned. Stir in the chicken and garlic and cook for 4-5 minutes. Add the turmeric, tomatoes, rice and stock, bring to the boil and simmer uncovered for 10 minutes, stirring occasionally.
- Stir in the green beans and simmer for a further 10-12 minutes until nearly all the liquid has been absorbed (the mixture should be wet not saucy). Serve sprinkled with roughly chopped flatleaf parsley and lemon wedges to squeeze over
